Do I need any of this to just use the app?

No. Pairing and messaging are self-explanatory in the app. The guides exist for the moments people actually ask about: verification, key import, and backups.

Do the guides match the current app version?

They track the shipping app. Where a screen moves between versions, the guide is updated with it.
